So You Wanna Become a JWU Culinary Student? ( Vol. I )

Hello,
       I'm currently wrapping up my second trimester as a Freshman Baking and Pastry student at Johnson and Wales (RI). And I wanted to just explain a day in the life of a student here.
First of all you have 3 trimesters. As a Freshie 2 of those consist of kitchen labs and only 1 is your academics. YOU WANT TO HAVE AM LABS! Trust me even if you are a late sleeper you will probably like it better. If you have AM labs then to have class "7AM" to 1PM then you have the rest of the day to do homework and eat at any of the dining facilities. Where if you get PM labs the only way to make the most of your day is to wake up at 8 or earlier. That way you can eat at Harborview or Snowden (the all you can eat places) for brunch. Because then your labs run 1:40-7:40PM and those dining halls close at 7:30. And then you have to eat at Red Sauce and City Burger (and you will get sick of their food after a week since they have a static menu.) Then by the time you eat after PM labs and you take a shower; you realize its time for bed and you have no time for homework.
     
More words of wisdom:

  • Kiss butt to all of your chefs. pretend you are in cooking boot camp. 
  • When they ask you a question respond "Yes Chef or No Chef"
  • Keep your uniform clean and ironed.
  • Take notes during "demos" in your labs. It will pay off in the long run! It will show you are prepared and you do not have to ask constant questions because that looks bad.
  • You have 5 different labs per a trimester.
  • At the end of every lab (segment) you have a "practical" a timed baking test to bake everything they tell you to. It is the battle of the fittest and prepared! Just breathe I'm not going to lie the first hour is hell everyone is running around and panicking over time. You can do it!
  • Starbucks (on campus and part of your meal swipes) will become your only source of energy! Get there mad early because it fills up by 6:30 AM..."may the odds forever be your favor!" lol 
  • Yep you only have 15 meal swipes a week so roughly that averages out to 2 a day use it wisely.
  • PST take a purse (backpack) with a small Tupperware container to Snowden  and Harborview and take a sandwich. This way you can have lunch fort the next day can not have to worry about wasting a swipe!

Stressed Is An Understatement ......*New Challenge*

      Hey everyone! SO, so far freshman year has been pretty good but they are not lying when they tell you it is a hard adjustment. Before getting my current job at Pizza Hut I applied for Federal Work Study and received it.  Then a month later I got offered a job. As a naive high school graduate I thought hey double the money I like the sound of that.......a month later I am where I am today over tired, over worked, no social life, and behind on my class work. 
     On top of that I am a health conscience little ball of nerves and I can almost feel the Freshman 15 creep upon me so in order to stop it I am going gluten free for about a month to just get back into a healthy and happy place of mind! I say this while munching on a banana and a cup of soy milk. haha 
     As for me and John were doing good. I feel as though I am stressing him out with my stress and I feel awful. But if I don't tell him then he gets concerned/mad. Thanksgiving break is in roughly 7 weeks. WE CAN DO IT! This is all I can think of for right now.

I Need To Stop...

I'm so sorry I keep falling off the place of the planet I did not realize how busy I was gonna be once I started college. To give you a recap of my life right now....I am at Johnson and Wales for Baking and Pastry; which is going pretty the the classes are so far good the chefs are a little scary because a lot of them are ex-military. Believe it or not the food at a culinary school is ehhh not much variety so I really hope you pasta and every other carb. Work is tiring but hey its money so I can't really complain, I have to say I love being a waitress I find it fun (this is my inner drama kid coming out haha). John hates that I'm always stressed though because I have "body issues" + I'm in Baking and Pastry ......you can almost guess my anxiety level. so he is worried and is constantly tell me to find my counselor but I legit have no time and lets just say he does not like that answer either. but that's an over view for now....life is going on and I'm still chugging along!

Freshie

I made it, yesterday was my first day of college classes. For those of you that don't know, I am attending Johnson and Wales baking and pastry arts. We are known for having strict past military Chefs but I lucked out and got a really sweet Chef she is funny and kind; sadly I only have her for 9 days because are Labs are on a 9 day rotation ): But it was nice to start off my year not being afraid of class haha. OH! and my first class is called Classic Pastry and we are learning all about puff pastry dough right now I even got to make my own dough YAY!!
As far as the freshie 15 journey I ate mixed nut s, a granola bar, and an apple for breakfast. I had salad for lunch. And had white veggie lasagna and a side salad for dinner. HERE IS WHERE IT GETS UGLY. my friend brought back fresh bread to the dorm O.O and I sample 3 kinds but i only ripped off pieces its not like I ate the whole thing :P  Today will be better!! Well I'm off to be at class for 6:45!!1

I Made It!!!

Omg let me start off with saying time really does fly!! So I successfully moved into my college dorm! Yes it was over whelming but I made it alive with still plenty of stuff to still organize and to buy! haha it never ends I will most likely be posting a picture soon once it is tidy and put together. But my three roomies are fantastic, so far lets just hope it stays that way :P Oh and I ate very good I had oatmeal for breakfast, an apple for lunch, and a very delicious veggie pasta with and orange, NO freshman 15 for this girl!!! This is a short post but there is not much to recap /:

Parents Weekend Part Two!

Okay I'm Back..

Day Three:
                   Game day!! So on Saturday Was the Air Force vs. Colgate game obviously we won!! :P I do not remember the score right off the top of my head but I know it was a blow out!! I got to finally meet up with some off the amazing girls/women from the Facebook group, it was exciting to see how we are all strangers and have barely anything in common but we all click so well!! I found it amazing. After the game we went to his sponsors house on a base to visit and have a cookout. They are such a great and welcoming family he is very lucky to have found them!! Oh and before the game I got to tailgate with him and his squad and I had a blast!!:D

Day Four: 
                We went horse back riding through the Garden of The Gods which was amazing, beautiful, and painful after 2 hours haha. (sadly I didn't take any pictures but I know his dad did) After we went shopping at Wally World and got dinner for the night. We ended up crashing back at the hotel and making pasta while watch Americas Got Talented with his family!! Then When we went to our room we talked all night, resolved any problems, and asked many questions. It was just what we needed and it was great! <3

Day Five:
               Oh how this day is the toughest! His family always says "You can cut the tension with a knife." Luckily this year we were able to eat lol. So we check out of the hotel and heading for The Cave of The Winds. Let me start off with saying OMG the view is just remarkable!! The Caves are so filled with history and just nature's beauty!! Then we went on a zip-line-type-of-thing...then headed towards food!! after we ate we knew soon enough we were gonna have to say See Ya Later... both of are moods instantly switched but thought of every possible way to drag out time. We went to the Chapel, we went back to Wally World, and back to his room where he lied and said "dad can you help me sent up my speakers?" We got to his room and he set them up himself his mom cleaned his room and I sat there in silence...Then his dad have us 10 minutes in his room to say See Ya Later... We both lost it it and started crying. Its those moments that reassure me we are going to be just fine.
